Timbre Cabernet Blend "Rare Groove" Central Coast 2021
"Terroir: From Paso Robles, Ballard, Happy Canyon Appellations. This wine is a blend of some of the premier regions for Cabernet and other noble varietals in the Santa Barbara and Paso Robles regions.
Vintage Notes: The growing season started with a dry, cold winter but transitioned to a successful budburst and flowering due to a burst of vine growth prompted by rising spring temperatures. Summer months remained moderate with a lack of rain presenting a drought concern that slightly impacted yields. Although quantities were smaller, the quality of the fruit was exceptional, as the water scarcity and extended growing season concentrated the grapes while maintaining crucial aromatics and acidity. Cabernet Sauvignon, as well as Pinot Noir, were both successful with the cooler temperatures enhancing their delicate aspects. Wines should be expected to develop nicely for the moderate to long term.
Winemaking Regimen: A Blend of nearly three quarters Cabernet Sauvignon, Merlot, and Cabernet Franc. Some lots of the wine was co-fermented (meaning there two appellations of Cabernet Sauvignon that were fermented together and not blended after the wine was complete). It took 22 days to go completely dry. The wine was then pressed to a combination of new and previously used barrels, after which it was bottled after 18 months of elevage.
Winemaker Tasting Notes: Dark and opaque, this wine has a fleshy, rich nose complete with notes of red fruit and baking spices. The palate has cherry, and cranberry framed by cocoa powder, a hint of tobacco, and some pleasant forest floor notes. It has structured, refined tannins, and finishes long with hints of clove and cinnamon. It can be enjoyed now with several hours of decanting - you’ll know it’s ready when the tannins appear. Enjoy over the course of several hours and enjoy the evolution. Or age well through 2028-2030 and beyond.
