Inside, the whites and sparkling bring precision and balance, with J. de Villebois Pouilly-Fumé Les Silex, Timbre 'Rare Groove #3' White Blend 2023, Pinto Holot White 2023, and Drappier Carte D'Or Champagne. You get a range from mineral-driven freshness to more layered, expressive styles, with the Champagne adding structure, fine bubbles, and length.

The rosés are a step above the usual, combining classic regions with more distinctive selections: Château Sainte Roseline Côtes de Provence Prestige Rosé 2024, Herzog Special Reserve Russian River Pinot Noir Rosé 2025, Elk Barbera Rosé Sierra Foothills 2024, and Adir Kerem Ben Zimra Marselan Rosé 2025. Clean, balanced, and more structured than typical rosé, with real character behind each bottle.
