Rolle 100% (15% new oak, 5 hectolitre barrels, French oak)

Harvested at night, vinified by plot, skin maceration, light direct pressing, cold stabulation then settling and fermentation at 16°C.

TASTING NOTES

Floral nose of hawthorn, clean with a complex aromatic palette, supple attack on the palate, citrus zest with lovely bitters, lovely salinity, brilliant tension.
