Baffonero takes its name from a vineyard, 100% Merlot, that was one of the first to be planted at Rocca di Frassinello. The company was born of a joint venture between Castellare di Castellina and Domaines Baron de Rothschild-Lafite, the most famous chateau in the world. The Baffonero vineyard lies below the winery designed by Renzo Piano, on terrain with perfect exposure.
Intense ruby red. The nose is fruity with a variety of black fruits, especially blackberry, blueberry and vanilla. In the glass the aromatic component changes evolving towards tobacco, chocolate and slightly on coffee. In the mouth you perceive the complexity. Full and robust with a freshness that makes it long and pleasant.
Located at the southern tip of Tuscany, Maremma is comprised of hills with very heterogeneous soils - sandstone, marl, volcanic rocks - and the coastal plain, made up of alluvial basins. The Mediterranean climate, with the mitigating action of the sea and low rainfall during the growing season, allows for perfect ripening of the grapes. In addition to Sangiovese, the Tuscan grape variety par excellence, international grape varieties have also found a perfect terroir in the vineyards of Maremma Toscana, first and foremost Merlot and Cabernet Sauvignon.
The Baffonero vineyard
Baffonero takes its name from the vineyard of the same name whose North/South-West orientation allows for an exposure that favors radiation in the afternoon hours. The ventilation, constantly guaranteed in summer by the dominant North-West wind, mitigates the maximum daytime temperatures and allows for a delay in the ripening of the grapes. The day-night temperature range that characterizes this area favors the accumulation of aromas and the maintenance of adequate levels of organic acids in the berry.
The soil, mostly composed of clayey schist, allows for good drainage, drastically reducing the vigor of the plants and containing production: the bunch is sparse, uniform, small in size and high consistency in the tissues of the grape. The soil acts on the grapes by giving concentration, excellent extracts and tannic contribution, but maintaining a marked acidity that remains alive at harvest.
The manual and careful work in the selection of the shoots, in the management of the canopy and in the thinning of the grapes ensures that the plant reaches its optimal balance.
